Find a pitcher with a good spout - a good spout allows you to pour the milk in a nice narrow accurate stream and create a good consistent texture in the finished drink. As a rule you typically want the pitcher approximately half full before steaming the milk, this equates to about 300ml of volume size per cup in small pitchers(allowing some room so that the milk does not overflow) or 250ml in larger pitchers. Select the right volume for the job - trying to foam milk for one cup of coffee in a 1 litre pitcher just will not provide good results. When selecting a jug for frothing milk there are a few things to keep in mind. Now you are ready to create your caffe latte, cappuccino, flat white, etc. Heat to your desired temperature, then shut off the steam before removing the pitcher. Position the pitcher so that the flow of steam creates a mixing action. Before the milk reaches the top of the jug, raise the pitcher to immerse the steam wand into the milk. After a few seconds (how long will depend on how much steam your machine delivers) the volume of milk will increase. Gently lower the pitcher until you start to 'foam' the milk by injecting volume into the milk. Insert the steam wand below the surface of the milk and open the steam tap.
